Ingredients:
1 cupEden Quinoa
-- rinsed, then roasted
1 1/3 cupWater
1 tbspEden Hot Pepper Sesame Oil
- (amount may be doubled)
1 medOnion, chopped
1 Garlic clove
-- peeled and pressed
2 tspCurry (optional)
1 cupCelery, chopped
1 bn Broccoli, chopped
1 Tomato, chopped
3 tbspEden Shoyu
2 tbspEden Brown Rice Vinegar
Procedures:
1Roast rinsed quinoa in skillet until it pops.
2Place quinoa in a casserole dish and add water.
3Heat oil, saute onions, garlic and curry until onions are translucent.
4Add celery, broccoli and tomato, saute briefly and add to quinoa.
5Add shoyu and brown rice vinegar.
6Bake at 350°F. for 45 minutes.
