Ingredients:
1/4 cupOlive oil
1 Onion, chopped
3 Garlic clove, chopped
4 Tuna steaks (6-8 oz)
1 lbsPotato, sliced
2 Tomato, skinned & chopped
2 Bell pepper, red, cleaned &
-sliced
1/2 tspSalt
1 tspCayenne
1 tbspParsley, chopped
1 Bay leaf
4 sliceBread, toasted
Procedures:
1Note: halibut may be substituted.
2Heat olive oil in a heavy casserle then saut the onion and garlic for 5 minutes.
3Add remaining ingre- dients and enough water to cover the fish.
4Stir to mix.
5Cover and simmer for 1 hour.
6Garnish with the toast and serve.
