Ingredients:
| 1 1/4
| cup | Rice, cooked | | 1
| each | Onion, small, chopped | | 1
| each | Green/Red Bell Pepper, Choppd | | 1
| x | Butter, Enough to saute veg's | | 3
| cup | Chicken, cooked and cut up | | 1
| each | Ham, thick slice, cubed | | 1
| can | Condensed Cheddar Soup | | 1/4
| cup | Milk |

Procedures:
| 1 | Prepare rice according to directions or your desire. | | 2 | Set aside. | | 3 | Cut up the chicken into small chunks and cook through, either on the stove top or the microwave. | | 4 | You can either cook it and then cut it up, or cut it up and then cook it. | | 5 | Chop onion and peppers into small pieces. | | 6 | Saute onion and pepper in the butter for about 4 minutes or until tender. | | 7 | Cut up the ham slice into small cube-like pieces. | | 8 | (although, any kind of ham, sliced, diced, cubed, would do). | | 9 | Stir in the cooked chicken, cubed ham, soup (straight from the can), and the milk. | | 10 | Heat until chicken is hot, stirring frequently. | | 11 | Stir the rice into the mixture and cook another few minutes until everything is hot. | | 12 | Be sure to mix in rice thoroughly. | | 13 | Will keep well if you prepare ahead and reheat before serving. | | 14 | Just be sure to heat it and mix it again well before serving. | | 15 | Freezes well also if you want to make an extra batch. | | 16 | Yummy...... | | 17 | Eileen shaughnessy, prodigy food & wine board |
