French onion soup (great chefs)

Ingredients:
2 tbspOil
2 medOnions
1/2 tspThyme
2 Bay leaves
Salt (to taste)
Pepper, white (to taste)
1 quartStock, chicken
6 sliceBread, French, toasted
3 cupCheese, Gruyere, grated
Procedures:
1Heat oil in a skillet and add the onions.
2Cook and toss until clear.
3add thyme and bay leaves.
4Cook until the onions turn light brown.
5add the chicken stock and simmer for 20 minutes.
6add salt and pepper to the soup to taste.
7pour into bowls, add croutons and top with cheese.
8Run under hot broiler until the cheese melts and begins to turn brown.
9(hint: the better the cheese the better the soup.
10And the better cheeses are the ones that run over the side of the bowl and "crisp" up into a tasty treat all by itself).
