Open-face mushroom-brie sandwiches

Ingredients:
2 tbspOlive oil
1 1/2 cupTrimmed assorted mushrooms
- such as shiitake, oyster
- chanterelle, morel
- and cultivated
1 tspMinced garlic
1/2 cupFinely diced onion
1 tbspRed wine vinegar
1 tbspWater
Salt and pepper, as desired
2 tbspFinely chopped parsley
4 sliceCountry bread
4 sliceBrie cheese
Procedures:
1Heat the oil in a skillet and add the mushrooms, garlic, onion, vinegar, water, salt and pepper.
2Cover and cook 3 minutes.
3Remove the cover and cook until mushrooms are tender, another 5 minutes.
4Remove from the heat, transfer the mushrooms to a bowl and add the parsley.
5Toast or grill the bread.
6Preheat a broiler.
7Place the bread on a baking sheet and top with mushrooms.
8Lay a piece of cheese on top and place under the broiler until melted.
9Serve immediately.
