Ingredients:

| cup | Trimmed assorted mushrooms | | | - such as shiitake, oyster | | | - chanterelle, morel | | | - and cultivated | | 1
| tsp | Minced garlic | | 1/2
| cup | Finely diced onion | | 1
| tbsp | Red wine vinegar | | 1
| tbsp | Water | | | Salt and pepper, as desired | | 2
| tbsp | Finely chopped parsley | | 4
| slice | Country bread | | 4
| slice | Brie cheese |

Procedures:
| 1 | Heat the oil in a skillet and add the mushrooms, garlic, onion, vinegar, water, salt and pepper. | | 2 | Cover and cook 3 minutes. | | 3 | Remove the cover and cook until mushrooms are tender, another 5 minutes. | | 4 | Remove from the heat, transfer the mushrooms to a bowl and add the parsley. | | 5 | Toast or grill the bread. | | 6 | Preheat a broiler. | | 7 | Place the bread on a baking sheet and top with mushrooms. | | 8 | Lay a piece of cheese on top and place under the broiler until melted. | | 9 | Serve immediately. |
