Ingredients:
2 largeEggplants
1/2 Lemon
1 cupWater
1/4 cupButter
1 tbspFlour
1 cupMilk
1/4 cupShredded mozzarella cheese
Nutmeg
Salt
Procedures:
1Smoke whole eggplants in covered barbecue, or bake at 350°F.
220-30 minutes, until tender.
3Add lemon half to water in shallow dish.
4Place eggplants in water, turn to coat thoroughly, and let stand until cool.
5Peel eggplants and remove seeds.
6Cut flesh into ? cubes.
7Melt butter in skillet.
8Add flour and cook and stir until light brown.
9Stir in milk.
10Add cheeses, eggplant, dash nutmeg and season to taste with salt.
11Cook over very low heat 5 minutes.
