Ingredients:
1 cupSugar
5 tbspCake Flour
1 dashSalt
1 Egg
OR
2 Egg yolks, slightly beaten
2/3 cupWater
1/3 cupLemon juice
1 tspLemon rind
2 tspButter
Procedures:
1Combine sugar, flour, and salt in top of double boiler; add egg, water, and lemon juice, mixing thoroughly.
2Place over boiling water and cook 10 minutes, stirring constantly.
3Add lemon rind and butter.
4Cool.
5Makes about 1 1/3 cups filling, or enough filling for two 8x8-inch layers, or three 9-inch layers.
