Ingredients:
1 9" Graham Cracker Crust
4 largeApples (Jonathan or
-Golden Delicious)
1 cupGranulated White sugar
1/3 cupBrown sugar
1/3 cupApple cider
1/4 cupChopped black walnuts
2 tbspOrange Juice
1 tbspLemon Juice
1 tspCinnamon
1/4 tspNutmeg
1/8 tspGround ginger
Ds Salt
2 tbspButter
1/3 cupBread Crumbs (unseasoned)
1 cupWhipping cream
Whipping cream for topping
LEMON SAUCE
1/3 cupBoiling water
1/3 cupGranulated white sugar
1 tbspSoftened butter
1 Lemon, juice and grated rind
Pn Salt
2 tspCornstarch
1/3 cupMilk
1 Egg, separated
Procedures:
1Peel apples; cut into small chunks.
2Cook with sugars, cider just until tender or barely translucent.
3Don"t overcook.
4Add nuts, juices, spices, salt.
5Melt butter over low heat.
6Stir in bread crumbs just to brown.
7Remove from heat.
8Add to apple mixture.
9Chill.
10Beat cream until stiff.
11Fold into cooled apple mixture.
12Pour into crust.
13Feeze.
14Top with more whipped cream and drizzle with lemon sauce (below).
15Lemon sauce: bring first 5 ingredients to boil in stainless steel or enamel pan.
16Boil 1 minute.
17Blend cornstarch, milk, egg yolk.
18Stir into boiling mixture over low heat until thick.
19Remove from heat.
20Fold in stiffly beaten egg white. makes 2 cups
