Ingredients:
1 Broiler-fryer (about 3#)
-cut up
1/4 cupFlour
1 tbspChili powder
2 tspSalt
1/2 tspPepper
2 tbspOil
1 largeOnion, chopped (1 cup)
1/2 largeGreen pepper, chopped

1 largeClove garlic, crushed
1 can(16 oz.) tomatoes, cut up
1 cupChicken broth or bouillon
3/4 cupUncooked rice
1 pack(10 oz.) frozen whole okra
-thawed slightly to
-separate (optional)
Procedures:
1Coat chicken with mixture of flour, chili powder, salt and pepper.
2Brown on all sides in hot oil in dutch oven; push to one side.
3Add onion, green pepper and garlic; saute until tender.
4Add tomatoes and broth; bring to boil.
5Stir in rice; cover and simmer 40 minutes, stirring occasionally, or until chicken and rice are tender and most of the liquid is absorbed.
6Add okra; cover an dcook 10 minutes or until okra is barely tender.
7In microwave oven: cook onion, green pepper and garlic in oil in uncovered large casserole 5 minutes.
8Add tomatoes, broth, rice and coated chicken; cover and cook 30 minutes, stirring occasionally, until chicken and rice are tender.
9Add okra; cover and cook 5 minutes or until tender.
10Pressure cooker: brown coated chicken in oil in uncovered pressure cooker.
11Push to one side.
12Add onion, green pepper and garlic; saute until tender.
13Add tomatoes and broth; bring to boil.
14Stir in rice and okra.
15Cover and cook, following manufacturer"s directions, at 15 pounds pressure 10 minutes.
16Cool cooker at once
