Healthy spam peppers

Ingredients:
1 canSPAM Luncheon Meat, cubed
-(12 oz)
2 cupShredded cabbage
1 cupShredded zucchini
1 Onion, shredded
1 Carrot, shredded
2 Garlic cloves, minced
1 1/2 tbspChopped fresh basil leaves
1 tspDried oregano
1/2 tspRed pepper flakes
1 canDiced tomatoes (28 oz)
1 1/2 cupInstant rice
1 tbspBrown sugar
8 Bell peppers, cored & seeded
Procedures:
1In skillet over medium-high heat, saute spam until lightly browned; remove from skillet.
2Add cabbage, zucchini, onion, carrot, garlic, basil, oregano, and red pepper flakes to skillet.
3Cook over low heat 10 minutes or until vegetables are crisp-tender.
4Drain juice from tomatoes; reserve juice.
5Add enough water to tomato juice to make 2 cups.
6Add juice, tomatoes, spam, rice, and brown sugar to vegetable mixture.
7Cover.
8Cook 10 minutes.
9In large saucepan, boil bell peppers in water 5-7 minutes or until crisp-tender.
10Drain.
11Fill peppers with spam mixture
