Foolproof tart dough

Ingredients:
1 cupAll-purpose flour
1 dashSalt
1 tspSugar
1 Stick of butter, COLD
6 tbspCold heavy cream or
Whipping cream
Procedures:
1This recipe can be used for pies, tarts, cheesecake or quiche.
2It makes a nice flaky shell.
3Place 1 cup of flour in a bowl with a little salt and 1 tsp sugar.
4Cut in one stick of cold butter on top and mix until it is the texture of golden meal.
5If ambient temperature in kitchen is high, then chill flour and bowl in freezer for up to 1 hour.
6Add 6 tbs of cold heavy cream (or whipping cream).
7Process in food processor until dough forms a ball.
8Turn out on a board or counter, dust lightly with flour and roll to shape.
9If in doubt about whether you are using enough flour when rolling out dough, use a lot and brush off excess
