Ingredients:
1 lbsChicken thighs, skinned
-boned, cut into 1" cubes
1 cupMushrooms, sliced
3/4 cupZucchini, sliced
1/2 cupPepper, green, chopped
1/2 cupOnion, chopped
1 tspOil, olive
1 largeGarlic clove, minced
2 (8-0z) cns no-salt-added
-tomato sauce
1/4 cupBurgundy, or other dry red
-wine
1 tspDried whole oregano
1/2 tspSalt
1/2 tspDried whole thyme
1/4 tspPepper
X Pasta, rotini
Procedures:
1Place chicken in a 2-quart casserole; cover with wax paper.
2Microwave on high 5-6 minutes; stir after 4 minutes.
3Drain and set aside; wipe dish with paper towel.
4Add mushrooms and next 5 ingredients to dish; toss well.
5Microwave, uncovered, at high 4 minutes, stirring after 2 minutes.
6Add tomato sauce and next 5 ingredients; stir well.
7Microwave at high 8-12 minutes or until slightly thickened, stirring every 4 minutes.
8Return chicken to dish; stir well.
9Microwave on high for 6 minutes or until chicken is thoroughly heated, stirring after 3 minutes.
10Let stand 3 minutes.
11Spoon over hot cooked pasta, such as rotini.
