Ingredients:
1/2 cupChopped green bell pepper
1/4 cupChopped onion
1 smallGarlic clove, minced
1 tbspVegetable oil
30 ozVan Camp's Red Kidney Beans
-- (Dark or Light), drained
28 ozCanned tomatoes, undrained
-- cut into pieces
13 1/4 ozSingle strength beef broth
12 ozCanned tomato juice
10 ozFrozen corn
1 tbspChili powder
1 tbspSugar (optional)
1 tspCumin
4 ozShredded cheddar cheese
Procedures:
1In 4-quart saucepan or dutch oven, saute green pepper, onion and garlic in oil 5 to 7 minutes or until tender.
2Add remaining ingredients except cheese.
3Bring to a boil over medium-high heat.
4Reduce heat; simmer 10 minutes, stirring occasionally.
5Sprinkle each serving with 2 tablespoons cheese.
