Elmira sour cream peach pie

Ingredients:
Pastry for 9" pie
1/3 cupFlour, all purpose
1/2 cupSugar, granulated
1 cupSour cream
-commercial thickness
5 cupPeaches, quartered, peeled
1/4 cupBrown sugar, lightly packed
Procedures:
1Preheat oven to 450°F.
2Line 9" pie plate with pastry.
3Trim and flute edges; do not prick pastry.
4With rotary beater, beat flour, sugar and sour cream (use commercial sour cream from store).
5Arrange flat edge of peach quarters on pastry in concentric circles.
6Pour sour cream on top.
7Bake 15 minutes at 450°F, then lower heat to 350f and bake 25-30 minutes or till filling is set.
8Sprinkle brown sugar over hot pie.
9Broil 1-2 minutes till sugar is melted.
10Serve warm.
