Eggnog cake

Ingredients:
1 Yellow cake mix
2 Eggs
1 1/2 cupDairy eggnog
1/4 cupButter or margarine, melted
1/2 tspGround nutmeg
1/2 tspRum extract
3 tbspCornstarch
2 cupEggnog
1/2 tspRum extract
WHIPPED CREAM FROSTING
2 cupHeavy whipping cream
1/4 cupSugar
Dash salt
1 tspVanilla
1/2 tspRum extract
1 tspUnflavored gelatin
2 tbspCold water
Nutmeg, optional

Procedures:
1~------------------------eggnog filling----------------- *regular-size package use cake mix calling for two eggs and a a/3 cups water.
2Combine cake mix; eggs, eggnog, butter, nutmeg and rum extract in large mixer bowl.
3Beat 4 minutes.
4Pour batter into 2 wax paper-lined greased and floured 8 or 9 inch cake pans.
5Bake at 375 degrees 30 minutes or until cake tester comes out clean.
6Cool 10 minutes, turn out onto wire rack and cool thoroughly.
7Spread cooled eggnog filling between layers.
8Frost with whipped cream frosting and garnish with nutmeg and red and green cherries.
9Refrigerate until serving time up to 24 hours.
10Makes 16 servings.
11Eggnog filling combine cornstarch with small amount of eggnog in stainless steel or glass saucepan.
12Blend until smooth.
13Blend in remaining eggnog and cook over simmering water until thickened and smooth.
14Add rum extract and cool.
15Whipped cream frosting combine whipping cream, sugar, salt and vanilla and rum extracts in mixing bowl, then chill.
16Whip until soft peaks form.
17Soften gelatin in 2 tablespoons cold water in cup.
18Place sup over hot water and gently stir gelatin until dissolved.
19Drizzle dissolved gelatin into whipped cream mixture and continue to beat until stiff.-la times-l2/29/9l.
