| 1 | ~------------------------eggnog filling----------------- *regular-size package use cake mix calling for two eggs and a a/3 cups water. |
| 2 | Combine cake mix; eggs, eggnog, butter, nutmeg and rum extract in large mixer bowl. |
| 3 | Beat 4 minutes. |
| 4 | Pour batter into 2 wax paper-lined greased and floured 8 or 9 inch cake pans. |
| 5 | Bake at 375 degrees 30 minutes or until cake tester comes out clean. |
| 6 | Cool 10 minutes, turn out onto wire rack and cool thoroughly. |
| 7 | Spread cooled eggnog filling between layers. |
| 8 | Frost with whipped cream frosting and garnish with nutmeg and red and green cherries. |
| 9 | Refrigerate until serving time up to 24 hours. |
| 10 | Makes 16 servings. |
| 11 | Eggnog filling combine cornstarch with small amount of eggnog in stainless steel or glass saucepan. |
| 12 | Blend until smooth. |
| 13 | Blend in remaining eggnog and cook over simmering water until thickened and smooth. |
| 14 | Add rum extract and cool. |
| 15 | Whipped cream frosting combine whipping cream, sugar, salt and vanilla and rum extracts in mixing bowl, then chill. |
| 16 | Whip until soft peaks form. |
| 17 | Soften gelatin in 2 tablespoons cold water in cup. |
| 18 | Place sup over hot water and gently stir gelatin until dissolved. |
| 19 | Drizzle dissolved gelatin into whipped cream mixture and continue to beat until stiff.-la times-l2/29/9l. |
