Easy pineapple pie

Ingredients:

20 ozCan crushed pineapple
3 1/2 ozBx instant lemon pud/pie mix
1 cupMilk
4 ozFrozen whipped topping, thaw
2 tbspLemon juice
1 tspLemon zest
1 8 or 9-in graham pie crust
Procedures:
1Drain pineapple well.
2Combine pudding mix and milk in medium bowl.
3Beat 2-3 min until very thick.
4Fold in whipped topping, pineapple, lemon juice and lemon zest.
5Pour into crust.
6Cover and refrigerate 4 hours or overnight.
7Garnish with pineapple chunks and mint sprigs.
8This is really great for those hot summer nights! calories: 266 per serving (but low in cholesterol!)
