Ingredients:
9" unbaked pie shell
2 cupUnsweetened cherries
1/4 cupSoft margarine
1 tbspFlour
1/2 cupSugar replacement
2 xEgg yolks
1/4 cupEvaporated milk
1/2 tspVanilla extract
2 xEgg whites
2 tspGranulated sugar replacement
Procedures:
1Drain cherries; pout into unbaked pie shell.
2Cream margarine, flour, and sugar replacement.
3Add egg yolks and beat until smooth.
4Add evaporated milk and vanilla extract.
5Pour over cherries.
6Bake at 450f for 10 minutes.
7Reduce heat.
8Bake at 350f for 30 minutes.
9Whip egg whites until soft peaks form.
10Add granulated sugar replacement; whip until thick and stiff.
11Top pie filling with meringue, carefully sealing edges.
12Bake at 350f for 12-15 minutes, or until delicately brown.
