Ingredients:
2 tbspLemon Juice
1 1/2 lbsFresh Peaches (6 c sliced)
1 1/4 cupSugar
2 tbspSugar
1/8 tspSalt
1/4 tspCinnamon
1/4 tspNutmeg
3 tbspFlour
4 tbspButter
1 cupHeavy Cream, Whipped
Procedures:
1Juice over peach slices in large bowl.
2Mix 1 ?cup sugar with the salt, nutmeg, cinamon and flour.
3Add to peaches.
4Toss until evenly coated.
5Spread in 1 ?quart baking dish.
6Dot with butter.
7Roll out pastry to to cover dish with 1 ?inch overhang.
8Press pastry to edge of dish and flute edge.
9Cut 3 vents in top.
10Sprinkle with remaining sugar.
11Bake 10 minutes at 450 degrees, then reduce heat to 350 degrees and bake 30 minutes more.
12Serve with whipped cream.
13Makes 1 pie preheat oven to 450 degrees prep.
