Ingredients:
8 largeSweet potatoes or yams
-peeled and cut into 2"
-chunks
2 cupPineapple chunks
1 cupBanana, sliced
2 cupHearts of palm, cut into 2"
-chunks
2 cupTempeh, cut into 1" chunks
2 cupDried lentils
3 cupVegetable stock
1/2 cupHoney or other natural
-sweetener
2/3 cupPrepared spicy mustard
1/2 cupCider vinegar
Procedures:
1Preheat oven to 250 deg.
2Combine all ingredients in a large roasting pan or casserole dish.
3Place in oven and bake, covered, for 2 hours.
4Stir occasionally and serve hot.
5Hint: for a sweeter taste, use apple juice to replace ?of the vegetable stock.
