Ingredients:
3 cupCooked brown rice
2 cupCooked turkey
-- (coarsely chopped)
8 ozPineapple chunks in juice
-- drain, reserve juice
8 ozSliced water chestnuts
-- drained
1 medApple, unpeeled
-- cored and chopped
1/3 cupChopped macadamia nuts
1/2 tspSalt
1/2 cupPlain yogurt
Lettuce leaves
1/4 cupShredded coconut, toasted
Procedures:
1Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt.
2Toss lightly with yogurt and 1 tablespoon pineapple juice.
3Serve on lettuce leaves and garnish with coconut.
