Ingredients:
1/3 cupButtermilk baking mix
1 1/2 tspPaprika
1/4 tspPepper
4 Chicken breast halves
4 Thin slices cooked ham
4 Thin slices swiss cheese
1/2 cupChicken broth
1 tbspCornstarch
1 cupHalf 'n Half
1 Minced parsley
Procedures:
1Servings: 4 blend baking mix, paprika and pepper.
2Flatten chicken breasts to ? thickeness blend cornstarch and half "n half.
3Place ham and cheese on chicken.
4Roll up from narrow end.
5Coat with baking mix, place seam side down in 8" round glass baking dish.
6Cover with wax paper, microcook on high 6 minutes.
7Add broth, cover, microcook on high 4 minutes.
8Remove chicken.
9Add cornstarch mixture to pan juices, stir until smooth.
10Microcook on high 3-5 minutes, stirring every minute until thickened.
11Add parsley, stir.
12Spoon sauce onto plate, top with chicken.
13Serve with mixed vegetables (broccoli, carrots, cauliflower) and hot bread
