Ingredients:
1 Egg, seperated
1/2 cupSkim milk (or less)
1 packGelatin (envelope)
1/8 tspSalt
1 tbspEqual (Nutrasweet)
1 1/2 cupCottage cheese (lumpy stuff)
1 tbspLemon juice
1 tspVanilla
6 tbspLite Coolwhip
(frozen non-dairy topping
Like whip cream)
Procedures:
1Take cottage cheese and cream in blender until very smooth .
2Set aside.
3Put egg yolk in top of double boiler beat well and add milk.
4Add gelatin & salt.
5Cook overr boiling water until gelatin dissolves and mixture thickens.
6(about 10 minutes) remove from heat, add sugar substitute.
7Cool.
8Add cottage cheese, lemon juice and vanilla to cooled mixture.
9Chill, stirring occasionally, until mixture mounds when dropped from a spoon.
10Beat egg white until stiff.
11Fold egg white and cool-whip together into mixture.
12Pour into graham crust.
13Or pour into pie plate and top with crumb topping.
14Crumb topping: crush 2 graham crackers fine.
15Mix with pinch of cinnamon and nutmeg.
16Calories (without topping or crust): 442 (whole pie!) calories with keebler graham crust: 1402 (per serving 175 7gr fat
