Ingredients:
2 tbspButter or margarine
2 tbspAll-purpose flour
1 cupMilk
1/4 tspSalt
1/4 tspDry mustard
1/2 cup(2 ounces) shredded sharp
Cheddar cheese
Procedures:
1Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 30 seconds at high).
2Add flour and blend to a smooth paste.
3Add milk gradually, stirring constantly.
4Cook uncovered in microwave overn 4 minutes at high, or until thickened; stir vigorously after 2 minutes, then every 30 seconds.
5Add salt, dry mustard and cheese to sauce; stir well.
6Cook uncovered in microwave oven 1 minute at high; stir.
7Yield: about 1 cup.
