To corn beef

Ingredients:
1 xBeef **
1 1/2 lbsSalt, kosher
1/2 ozSalt peter
1 xWater
1/2 lbsBrown sugar
Procedures:
1** fresh-killed?thoroughly scrub and clean a good oak barrel.
2Put as much good fresh-killed beef as desired to be corned in barrel and cover with cold water.
3Have the water 2 inches above the meat.
4Let stand for 48 hours.
5Drain off the water and measure before discarding.
6Measure the same amount of cold water (spring water, if possible) and to every gallon of water used, add the above proportions of salt, sugar and salt peter.
7Boil for 15 minutes and then skim.
8When cold, pour over the beef.
9Place a heavy weight on meat to keep it under brine.
10Store in a cool cellar
