Ham stir-fry over sweet potatoes

Ingredients:
6 eachSMALL SWEET POTATOES
2 tbspOIL
1 tspGARLIC POWDER
1 cupCHOPPED ONIONS
1 tbspMINCED GINGER ROOT
1 cupCHOPPED GREEN PEPPER
1 tbspHONEY
8 ozPINEAPPLE CHUNKS
1 cupCHICKEN BROTH
1/2 tspCHINESE FIVE SPICES
1 tbspCORNSTARCH
1 tbspWATER
2 cupJULIENNED COOKED HAM SLICES
1/2 cupTOASTED ALMONDS
1 xSALT AND PEPPER TO TASTE
Procedures:
1Wash sweet potatoes.
2Pierce with a fork several times.
3Bake at 3500°F.
4For about one hour or until tender.
5Heat oil in skillet.
6Saute onion, garlic, ginger and green pepper until tender.
7Add honey, pineapple chunks, chicken broth and chinese five spices.
8Simmer for five minutes.
9Blend together the cornstarch and water until smooth.
10Stir into the broth.
11Heat until boiling, stirring until thickened.
12Stir in ham and almonds.
13Season with salt and pepper to taste.
14Heat through.
15Place hot sweet potatoes on platter or indiviual plates.
16Cut through skin and coarse mash with a fork.
17Spoon ham onto potatoes.
18Serve immediately
