| 1 | Cut veal steak in cubes; dredge with flour and season with salt & pepper. |
| 2 | Melt the shortening (bacon fat is preferable) and brown the meat in it. |
| 3 | Remove meat from pan and stir in the flour and blend. |
| 4 | Add the juice from the tomatoes and stir well until mixture thickens. |
| 5 | (tomatoes are not used in this recipe- save for another use). |
| 6 | Add the meat, carrots and onion. |
| 7 | Cover pan closely and simmer for 45 minutes |
