| | Liver, calf | | | *Bread Stuffing recipe | | 3
| slice | Salt pork | | | Flour | | | Salt & pepper |

Procedures:
| 1 | Wash the liver in cold salted water and dry well. | | 2 | Make an incision in the thickest part, using a sharp knife. | | 3 | Fill with bread stuffing. | | 4 | Season well with salt and pepper and dredge with flour. | | 5 | Place in roasting pan and place strips of salt pork on top. | | 6 | Add a little water and roast at 450°F for 15 minutes. | | 7 | Reduce heat to 350°F and continue cooking for 45 minutes. | | 8 | Serve with cooked spinach and baked potatoes |
