| 1 | Put the liver through a meat chopper. |
| 2 | (beef liver may be used). |
| 3 | Fry the onion in the shortening with the bread crumbs. |
| 4 | Combine the liver and the eggs and mix well. |
| 5 | Add the onion and bread crumbs. |
| 6 | Season to taste. |
| 7 | Stir in enough flour (using more than ?cup if necessary) to make a batter stiff enough to drop from spoon. |
| 8 | Drop from a tablespoon into a kettle of hot broth or soup and cover kettle tightly. |
| 9 | Cook for 30 minutes. |
| 10 | Shake pan frequently to prevent sticking. |
