Ingredients:

| | Egg whites, unbeaten | | 1 1/2
| cup | Sugar | | 5
| tbsp | Water | | 1 1/2
| tsp | Light corn syrup | | 1 1/2
| tbsp | Burnt sugar syrup, see below | | | USE UP TO 2 TB OF ABOVE |

Procedures:
| 1 | Combine all ingredients in the top of a double boiler, beating with a rotary egg beater until thouroughly mixed. | | 2 | Place over rapidly boiling water, beat constantly with rotary egg beater, and cook 7 minutes, or until frosting will stand in peaks. | | 3 | Remove from boiling water and beat until thick. | | 4 | Makes enough for tops and sides of two 9-inch layers. | | 5 | To make burnt sugar syrup, place ?cup sugar in heavy skillet over medium flame. | | 6 | Stir constantly as sugar melts, then becomes dark mahogany color, and smokes noticeably. | | 7 | Remove at once from fire, add very slowly 1/3 cup hot water, and stir until dissolved. | | 8 | Cool. | | 9 | Measure 1 ?to 2 tablespoons for frosting. | | 10 | Store remaining burnt sugar syrup in a jar to use for cakes and frostings. | | 11 | Kate smith collection published 1940 by general foods corp |
