Jellied veal loaf

Ingredients:
3 lbsVeal
2 ea Celery, chopped
1 xSalt & pepper
1/2 cupWater, cold
1 ea Onion, chopped
1 tbspButter
1 tbspGelatin
Procedures:
1Cut veal in pieces, add the onion, celery, butter and seasoning to taste.
2Cover with water and let cook slowly until meat is tender and liquid is reduced to about 2 cups.
3Soak gelatin in the cold water for 5 minutes.
4Grind the veal.
5Strain the stock and dissolve the gelatin in the hot stock.
6Add ground veal and mix well.
7Pour into loaf pans to jell
