Ingredients:
1 pintNavy beans
1 tspMustard, dry
1 tbspMolasses
1 1/2 tbspSugar
1/4 lbsSalt pork
1 1/2 tspSalt
1/2 cupWater, boiling
Procedures:
1Cover beans with cold water and soak over night.
2Change the water and cook at slightly below boiling point until skins burst.
3To test beans, take a few and expose them to cold air; if shells burst, they are sufficiently cooked.
4Drain off the water and add the salt pork which has been cut into strips.
5Put in bean pot, having some of the salt pork slices on top.
6Mix the mustard, sugar, salt, and molasses together and add to the beans.
7Add the boiling water.
8Cover pot and bake at 250°F about 6 hours, removing the cover during the last hour
