Ingredients:
3 cupCooked rice
- cooled to room temperature
2 cupCanned black beans
-- rinsed and drained
1 medRed onion, chopped
1 cupCubed jicama
-- (cut into 1/8-inch cubes)
1/2 cupSliced black olives
1/2 cupDiced red pepper
1/2 cupDiced green pepper
1/4 cupOlive oil, divided
4 ozCubed cooked ham
3 tbspRed wine vinegar
1 Garlic clove, minced
1/2 tspGround cumin
1/2 tspChili powder
1/2 tspSalt
1/2 tspGround black pepper
Procedures:
1Combine rice, onion, jicama, olives, and peppers in large bowl; set aside.
2Heat 1 tablespoon oil in large skillet over medium heat.
3Add ham; cook 2 to 3 minutes stirring constantly.
4Add to rice mixture.
5Combine remaining oil, vinegar, garlic, cumin, chili powder, salt and pepper in small jar with lid.
6Shake to blend.
7Drizzle dressing over salad.
