Apple strudel (apfelstrudel)

Ingredients:
2 1/2 cupFlour
2 tbspShortening
1/2 cupWater, warm
1 cupBrown sugar
1/2 cupNuts, chopped
1/2 tspCinnamon
1 tspSalt
2 ea Egg, slightly beaten
5 cupApple, sliced
1/2 cupRaisins
3 tbspButter, melted
1 ea Lemon, grated rind of
Procedures:
1Sift the flour and salt together.
2Cut in the 2 tbsp shortening and add the eggs and water.
3Knead well, then throw or beat dough against board until it blisters.
4Stand it in a warm place under a cloth for 20 minutes.
5Cover the kitchen table with a small white cloth and flour it.
6Put dough on it.
7Pull out with hands very carefully to thickness of tissue paper.
8Spread with mixture made of the sliced apples, melted butter, raisins, nuts, brown sugar, cinnamon and grated lemon rind.
9Fold in outer edges and roll about 4 inches wide.
10Bake at 450°F for 10 minutes, reduce heat to 400°F and continue to bake about 20 minutes.
11Let cool.
12Cut in slices about 2 inches wide
