Ingredients:
3 lbsHam
2 tbspBrown sugar
1 xMilk
1/4 tspPepper
3 tbspButter, melted
1 quartApple, dried
2 cupFlour
4 tspBaking powder
1 ea Egg, well beaten
1 tspSalt
Procedures:
1Pick over and wash dried apples.
2Cover with water and let soak over night or for a number of hours.
3In the morning, cover ham with cold water and let boil for 3 hours.
4Add the apples and water in which they have been soaked and continue to boil for another hour.
5Add brown sugar.
6Make dumplings by sifting together the flour, salt, pepper and baking powder.
7Stir in the beaten egg, milk (enough to make fairly moist, stiff batter), and melted butter.
8Drop the batter by spoonfuls into the hot liquid with the ham and apples.
9Cover kettle tight and cook dumplings for 15 minutes.
10Serve piping hot on large platter
