Ingredients:
2 Pounds potatoes (about 6 med
1 1/2 cupMayonnaise or salad
-Dressing
1 tbspVinegar
1 tbspPrepared mustard
1 tspSalt
1/4 tspPepper
2 medStalks celery, chopped
-(about 1 cup)
1 medOnion, chopped
-(about ?cup)
1 can(4 ounces) chopped green
-Chilies, drained
2 Avocados, chopped
2 Tomatoes, chopped
Procedures:
1Prepare and cook potatoes; cool slightly.
2Cut into cubes (about 6 cups).
3Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl.
4Add potatoes, celery and onion; toss.
5Stir in chilies.
6Cover and refrigerate at least 4 hours.
7Before serving stir in avocados and tomatoes.
