Ingredients:
2 cupBrown rice, short grained
-uncooked
1/2 cupLotus seeds, dry
3 1/2 cupWater
1 cupAlmonds, sliced, roasted
Procedures:
1Wash rice and lotus seeds and place in a pressure cooker.
2Add water and soak for 3 to 5 hours, until softened.
3Add salt and secure lid.
4On medium-high heat, bring pressure up to 15 pounds.
5Lower heat and place a flame deflector or heat diffuser beneath the pressure cooker.
6Cook for 50 minutes.
7Remove from heat and allow pressure to reduce.
8Mix in almonds and serve hot.
