Ingredients:

| tbsp | Olive oil | | 1
| med | Sliced onion | | 2 1/2
| oz | Jar sliced drained mushrooms | | 1/2
| tsp | Basil | | 1/2
| tsp | Fennel | | 2
| cup | Frozen mixed vegetables | | 1 1/2
| lbs | Fresh or frozen sole, thawed | | 1/4
| tsp | Salt | | 1/4
| tsp | Pepper | | 2
| med | Tomatoes, sliced | | 1/3
| cup | Grated parmesan cheese |

Procedures:
| 1 | In a large skillet over medium heat, heat the oil. | | 2 | Add the onion, mushrooms, basil and fennel. | | 3 | Saute 4 minutes or until onion is tender. | | 4 | Stir in frozen vegetables. | | 5 | Place fish over vegetables, sprinkle with salt and pepper. | | 6 | Arrange tomato slices over fish. | | 7 | Reduce heat to low,cover and cook for 12-16 minutes or until fish flakes with a fork. | | 8 | Remove from heat, sprinkle with parmesan cheese, cover and let stand about 3 minutes or until cheese is melted |
