Italian style fish & vegetables

Ingredients:
2 tbspOlive oil
1 medSliced onion
2 1/2 ozJar sliced drained mushrooms
1/2 tspBasil
1/2 tspFennel
2 cupFrozen mixed vegetables
1 1/2 lbsFresh or frozen sole, thawed
1/4 tspSalt
1/4 tspPepper
2 medTomatoes, sliced
1/3 cupGrated parmesan cheese
Procedures:
1In a large skillet over medium heat, heat the oil.
2Add the onion, mushrooms, basil and fennel.
3Saute 4 minutes or until onion is tender.
4Stir in frozen vegetables.
5Place fish over vegetables, sprinkle with salt and pepper.
6Arrange tomato slices over fish.
7Reduce heat to low,cover and cook for 12-16 minutes or until fish flakes with a fork.
8Remove from heat, sprinkle with parmesan cheese, cover and let stand about 3 minutes or until cheese is melted
