-Thinly sliced
2 medBunches
-Watercress, stems removed
-Leaves washed and dried
2 largeBelgian endive, cut
-Into 1'' chunks on the
-Diagonal
Mustard vinaigrette
1 cupGood olive oil
1/4 cupRed wine vinegar
2 tbspDijon mustard
Salt and pepper
Procedures:
1Toss together the mushrooms, watercress and endive.
2Toss lightly with mustard vinaigrette.
3Serve immediately
