Ingredients:

| lbs | Boneless Chicken breast, cut | | | Into 1 inch cubes | | 1/2
| cup | Gordon's London Dry Gin | | 4
| | Limes (Juice of) | | 1/2
| cup | Extra Virgin Olive Oil | | 1
| cl | Garlic, minced | | | Salt & Pepper to taste | | 4/5
| cup | Leeks, sliced | | 1
| cup | Tomatoes, chopped | | 1/2
| cup | Fresh Cilantro, chopped | | 1/8
| lbs | Sundried Tomatoes, chopped | | | Tabasco to taste |

Procedures:
| 1 | Cut chicken into 1 inch pieces. | | 2 | Pour gin, fresh lime juice, olive oil, salt & pepper. | | 3 | Marinate over night. | | 4 | Place chicken on skewers. | | 5 | Recipe yields 30-40 pieces. | | 6 | In a flat large fry pan, add a little oil and fry chicken until slightly brown. | | 7 | Add marinate and remaining ingredients and finish cooking chicken. | | 8 | Add a dash of tabasco. | | 9 | Serve immediately, garnish with fresh chopped cilantro |
