Ingredients:
2 1/4 lbsBoneless Chicken breast, cut
Into 1 inch cubes
1/2 cupGordon's London Dry Gin
4 Limes (Juice of)
1/2 cupExtra Virgin Olive Oil
1 clGarlic, minced
Salt & Pepper to taste
4/5 cupLeeks, sliced
1 cupTomatoes, chopped
1/2 cupFresh Cilantro, chopped
1/8 lbsSundried Tomatoes, chopped
Tabasco to taste
Procedures:
1Cut chicken into 1 inch pieces.
2Pour gin, fresh lime juice, olive oil, salt & pepper.
3Marinate over night.
4Place chicken on skewers.
5Recipe yields 30-40 pieces.
6In a flat large fry pan, add a little oil and fry chicken until slightly brown.
7Add marinate and remaining ingredients and finish cooking chicken.
8Add a dash of tabasco.
9Serve immediately, garnish with fresh chopped cilantro
