Ingredients:
1 3/4 cupSugar
2 tbspFlour, All-purpose
1/4 cupCornmeal
1/4 tspSalt
2/3 cupButtermilk
5 Egg, Lightly Beaten
1 tspVanilla
1/2 cupMargarine, Melted Butter or
1 Pastry Crust, Unbaked, 9-inch
Procedures:
1Combine sugar, flour, cornmeal and salt in a large bowl; add buttermilk and eggs, stirring until blended.
2Stir in vanilla and margarine, and pour into unbaked pastry shell.
3Bake at 350°F for 40-45 minutes or until set.
4Check for doneness after the minimum baking time by gently shaking the pie.
5The center should be set with a slight jiggle.
6Cool on a wire rack approximately 1 hour.
7Yield: 1 9-inch pie
