Ingredients:

1/2 cupChopped onion
1 lbsBoneless, skinless chicken
-breast halves, cut into
-1" cubes
2 tbspWater
2 tbspCurry powder
1/4 tbspSalt
1/8 tbspPepper
1/3 cupPeanuts
1/3 cupChutney
2 tbspCoconut
2 tbspCurrants
1 packGreen Giant Harvest Fresh
-Frozen Mixed Vegetables
-(9 oz)
2 packGreen Giant Rice Originals
-Frozen White 'n Wild Rice
-(10 oz)
-OR
2 cupCooked white and wild rice
-mixture
1 Red bell pepper, cut into
-strips
Procedures:
1Place oil and onion in 2-quart casserole; cover with lid or vented plastic wrap.
2Microwave on high 2 minutes.
3Add chicken, water, curry powder, salt and pepper; re-cover.
4Stirring midway through cooking, microwave on medium high (70%) 5 minutes, or until chicken is no longer pink.
5Add peanuts.
6Chutney, coconut, currants and frozen mixed vegetables; re-cover.
7Stirring midway through cooking, microwave on high 6 minutes, or until vegetables are crisp tender.
8Let stand covered.
9Prepare rice according to package microwave directions.
10To serve, spoon rice onto serving platter; top with chicken mixture.
11Garnish with pepper strips
