Ingredients:
2 Whole chicken breasts
2 Hot peppers (or more)
- crushed
1/2 cupCornstarch
1 Orange rind, minced
1 tbspGinger, minced
1/3 cupFried peanuts, chopped
BATTER
1 Egg
1/4 cupBeer
2 tbspSoy sauce
1/2 tspSalt
1/4 cupFlour
1/4 cupCornstarch
1/2 tspBaking powder
1 dashPepper
SEASONING SAUCE
6 tbspSugar
3 tbspCider vinegar
5 tbspSoy sauce
1 tspCornstarch
Procedures:
11.-Skin and bone the chicken.
2Cut into 1-? x 2" strips.
3Mix batter.
4Add chicken, tossing lightly to coat.
5Cover and chill for ?hour.
6Mix seasoning sauce.
7Coat each piece of chicken well with cornstarch.
8Arrange chicken on well-floured wax paper.
9Heat 2-3" of oil in a pan until very hot.
10Fry chicken for 30 seconds.
11Drain well on a cookie sheet covered with paper towels.
12Reheat oil over high heat until very hot.
13Refry chicken until crispy and golden brown.
14Drain again and keep hot in oven.
15Heat 2 tablespoons oil in wok over medium heat.
16Fry orange rind until golden brown.
17Add chili and ginger, stir-frying 20 seconds.
18Mix in seasoning sauce and heat to boil, stirring constantly until foam subsides and the sauce thickens slightly and turns to glaze (about 2 minutes or more).
19Add fried chicken, tossing to coat well.
20Sprinkle chopped peanuts on top
