Ingredients:
4 cupCrumbled French bread
1 medGreen bell pepper, (crusts
-trimmed) seeded and chopped
5 medTomatoes, peeled
1 smallClove (head?) garlic
-minced, seeded and
-coarsley chopped
4 cupCold water
2 medCucumbers, peeled
1/4 cupRed wine vinegar
4 tspSalt
1 largeOnion, chopped
1/4 cupOlive oil
1 tbspTomato paste
GARNISH:
1 cupDried French bread cubes
-crusts trimmed
1/2 cupPeeled and finely chopped
-cucumber
1/2 cupFinely chopped onion
1/2 cupSeeded and finely chopped
-green bell pepper
Procedures:
1Combine crumbled bread, tomatoes, cucumbers, onion, bell pepper and garlic in a large bowl.
2Stir in water, vinegar and salt.
3Puree in 2 batches in blender on high speed 1 minute.
4Transfer to another bowl.
5Whisk in olive oil and tomato paste.cover bowl with plastic wrap.
6Refrigerate at least 2 hours or overnight.
7Ladle soup into bowls.
8Garnish with bread cubes, onion, cucumber and bell pepper and serve.
9Makes 4 to 6 servings.
