Ingredients:
2 tbspMargarine
2 Medium zucchini, sliced
1 Medium onion, sliced
1 packUnflavored gelatin
1/4 cupCold water
1 cupSkim milk, heated to boiling
3/4 cupLite sour cream
1/3 cupGrated parmesan cheese
1 tbspDried dill weed
1 tbspSalt
1 dashRed pepper
Procedures:
1In skillet, melt margarine and cook zucchini with onion, stirring occasionally until very tender; set aside.
2In blender, sprinkle gelatin over cold water; let stand 2 minutes.
3Add hot milk and process at low 2 minutes.
4Add sour cream, cheese, dill, salt and pepper, then zucchini mixture.
5Process at high until smooth.
6Pour into bowl.
7Chill until set.
8To serve, whisk smooth
